Tres Leches Cake has always been one of our favorites to serve for breakfast. Firstly, because no one ever expects cake for breakfast. Secondly, just because of how delicious this Pioneer Women Recipe is! Paired with one of our Southwestern Style Egg Dishes, this traditional Hispanic cake is sweet and satisfying!

Ingredients:

  • 1 Cup All- Purpose Flour
  • 1 1/2 Teaspoons Baking Powder
  • 1/4 Teaspoon Salt
  • 5 Eggs, Separated
  • 1 Cup Sugar, Divided
  • 1/3 Cup Milk
  • 1 Teaspoon Vanilla
  • 1/4 Cup Heavy Cream
  • 1 14oz can Sweetened Condensed Milk
  • 1 12oz can Evaporated Milk

Instructions:

  1. Preheat Oven to 350 degrees.

  2. Crack and separate all 5 eggs, putting the yolks in one bowl and the whites in the bowl of your stand mixer. Make sure there is absolutely no yolk in your whites or they will not whip properly.

  3. To the bowl with the yolks, whisk in ¾ Cup of your sugar (saving the other ¼ cup), flour, baking powder, vanilla, salt, and milk.

  4. Using the whisk attachment on your stand mixer, beat the egg whites until they start to foam. Slowly add in your remaining ¼ cup of sugar and continue to beat in the stand mixer until stiff peaks form.

  5. Prepare a 9X13 pan with non-stick cooking spray.

  6. Slowly fold together your yolk mixer and egg white mixture until fully incorporated. Try not to knock out too much air.

  7. Once combined, add your cake batter to your prepared baking dish. 

  8. Bake at 350 for 25-35 minutes. The cake will puff up and start to turn golden brown.

  9. Pull out of oven and let cool slightly. While cooling, you can prepare your soaking liquid.

  10. In a bowl whisk together the heavy cream, sweetened condensed milk, and evaporated milk until fully combined.

  11. Using a fork or other sharp object, poke holes all throughout the top of your cake. This will help the liquid soak in better.

  12. Pour soaking liquid over cake as evenly as possible and let it soak overnight or at least for several hours.

  13. Serve chilled with homemade whipped cream and fruit!
