Cowgirl Cookies are one of those cookie recipes that we have had around for a while, and they are always a hit. Filled with craisins instead of raisins, they are the perfect elevated Oatmeal Cookie recipe.

Total Time: 35 Minutes
Servings: 30 Cookies

Ingredients:

  • 1 1/2 Cups All Purpose Flour
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • 1 Cup Melted and Cooled Butter
  • 1 Cup Packed Brown Sugar
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 2 1/2 Cups Old Fashioned Oats
  • 2 1/4 Cups Chocolate Chips
  • 1 1/2 Cups Rice Crisp Cereal
  • 1 Cup Raisins or Craisins

Instructions:

  1. In a medium bowl combine flour, baking powder, and salt.

  2. In the bowl of a stand mixer, beat the melted butter and sugars until blended.

  3. Add Eggs, one at a time, beating well after each addition. Then add the vanilla.

  4. Slowly add the flour mixer with the mixer on a low speed and beat until just combined.

  5. Stir in Oats, Chocolate Chips, Cereal, and Raisins or Craisins.

  6. Drop in 2 Tbsp. balls on a baking sheet, about two inches apart and bake for 10-14 minutes.
