We adapted this recipe from Erin Lives Whole. While we did enjoy the original recipe we wanted to a little more interest to it. Julie loves her nuts and dried fruit textures so we bumped up the amount of pecans and added the dried cranberries. We have been steeping our Steel Cut Oatmeal in coconut milk OR Apple Cider for years, and the Apple Cider took this recipe to a new level as well. We have topped with Homemade Caramel as well as different frosting drizzles as well. make it your own and enjoy!

Total Time: 30 Minutes

Ingredients:

  • 4 cups rolled oats
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 3 1/2 cups apple cider
  • 4 eggs
  • 2/3 cup maple syrup
  • 1/3 cup brown sugar
  • 4 teaspoons vanilla
  • 4 medium apples diced
  • 1 1/2 cups chopped pecans
  • 1 cup dried cranberries

Instructions:

  1. Preheat Oven to 375 degrees.

  2. In a large mixing bowl combine, Oats, Pecans, Dried Cranberries, Oats, Nutmeg, Cinnamon, and Brown Sugar.

  3. In a blender or separate bowl combine the Maple Syrup, Apple Cider, Eggs, and Vanilla.

  4. Prepare a 9X13 pan with cooking spray.

  5. Combine your wet ingredients with your dry ingredients and then stir in your chopped apples.

  6. Dump into your 9×13 pan and bake until set. 20-30 minutes.

  7. Serve with your favorite homemade Caramel Sauce.
