Our new favorite Baked Oatmeal! This recipe is packed full of flavors and textures and allows us to use some of our very own Goldberry grown carrots.

Ingredients:

  • 3 Tablespoons Butter
  • 1 Egg
  • Zest of one orange
  • 1/2 Cup Orange Juice
  • 2 Cups Milk
  • 1/3 Cup Maple Syrup
  • 1 Teaspoon Vanilla
  • 1 Teaspoon Salt
  • 1 Teaspoon Cinnamon
  • 1/2 Teaspoon Ginger
  • 2 Cups Old Fashioned Oats
  • 1/2 Cup Steel Cut Oats
  • 1 Medium Apple
  • 1 Large Carrot Grated
  • 1/2 Cup Raisins
  • 1 Teaspoon Baking Powder
  • 1/2 Chopped Nuts of Choice
  • Maple Syrup and Heavy Cream for Serving

Instructions:

  1. Preheat Oven to 375 degrees and grease an 8"X8" baking pan.

  2. In a blender, blend together the egg, orange zest, orange juice, milk, maple syrup, melted butter, vanilla, salt, cinnamon, and ginger.

  3. In a mixing bowl combine the old fashioned oats, steel cut oats, apple, carrot, raisins, baking powder, and chopped nuts.

  4. Dump the blender into the mixing bowl and combine all ingredients together. Once combined, dump everything into the prepared baking dish and back for 30-40minutes. When the oats are baked and completely set, take them out of the oven and let stand 5-10minutes.

  5. Plate each individual slice and top with warmed cream and maple syrup.
