This fritter bread has become a go-to for us in the kitchen. We like to pair it with our Quiche with Homemade Crust, Strata, or Hashbrown Quiches. This was adapted from a Noshing with the Nolands recipe we found on Pinterest. We love swapping the fruit throughout the year to different seasonal flavors. While the apple is a delicious classic, this is also great with berries, rhubarb, cherries, and so much more!
Ingredients:
- Batter Ingredients
- 1 1/2 Cups Whole Wheat White Flour (or AP Flour)
- 2 Teaspoons Baking Powder
- 1/2 Cup Softened Butter
- 2/3 Cup Granulated Sugar
- 2 Eggs
- 1 Teaspoon Vanilla
- 1/2 Cup Plain Greek Yogurt
- Apple Filling Ingredients
- 2 Medium Apples (peel if that is your preference)
- 2 Tablespoons Granulated Sugar
- 1 Teaspoon Cinnamon
- Pinch of Cardamom
- Pinch of Nutmeg
Instructions:
-  In the bowl of a stand mixer cream together the butter and sugar. 
-  Add in the eggs one at a time until fully incorporated. 
-  Add in Vanilla and Baking Powder. 
-  Slowly Add Flour until completely combined. The Batter will look a little dry at this point. 
-  Lastly, add in the Greek yogurt. Stir on medium speed until batter is smooth. 
-  Make your Apple Filling. After you finish chopping your apples, add them to a bowl with sugar, cinnamon, cardamom, and nutmeg. Stir until all the apples look evenly coated. 
-  Prepare a loaf pan with a strip of parchment paper and cooking spray so you can pop your loaf out easily when it is done baking. 
-  Eyeball about half the batter into the bottom of your loaf pan and spread as evenly as possible. 
-  At this point you can dump all of your apple mixture onto your layer of batter OR you can reserve some for the top of the loaf as well. 
-  Once you have a layer of apples, spread your remaining batter on top as evenly as possible. Top with remaining apple mixture if desired. 
-  Bake at 350 degrees for 45 minutes to an hour. 
-  Once cooled you can serve it plain or with your favorite frosting. We love serving ours with our Browned Butter Bourbon Cream Cheese Frosting.
